Ingredients

  • 1/3 ripe medium cantaloupe
  • 1 package unflavored gelatin
  • 1/4 cup cold water
  • 1 cup whipping cream
  • 2 eggs
  • 1/3 cup sugar
  • 2 cups mint leaves

Instructions

  1. Puree the cantaloupe until smooth.
  2. Sprinkle unflavored gelatin over cold water in a double boiler and stir until dissolved.
  3. Add the pureed melon to the gelatin mixture and allow to cool.
  4. Whip the cream until soft peaks form.
  5. Whip the eggs until frothy, then beat in sugar until stiff peaks form.
  6. Fold the whipped cream into the egg whites.
  7. Add the cooled cantaloupe and gelatin mixture and fold gently.
  8. Pour the mousse into a serving bowl.
  9. Cover and chill for 1 hour.
  10. Garnish with fresh mint leaves before serving.
