Ingredients

  • 2 1/3 cups sugar
  • 2/3 cup water
  • 2/3 cup oil
  • 4 eggs
  • 2 cups mashed sweet potato
  • 3 1/3 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine sugar, water, oil, eggs, and mashed sweet potato in a mixing bowl and mix thoroughly.
  3. Add dry ingredients: flour, baking soda, salt, cinnamon, and baking powder, and mix until just combined.
  4. Fold in chopped pecans.
  5. Divide the batter evenly between two greased loaf pans.
  6. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in the pans to room temperature before removing and slicing.
