Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 1/4 cups oil
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 3 cups apples, finely chopped
  • 1 cup walnuts, chopped
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda

Instructions

  1. Beat eggs with sugar until well combined.
  2. Add oil, salt, cinnamon, and vanilla extract; mix thoroughly.
  3. Stir in flour, baking soda, chopped apples, and chopped walnuts until the dough is very thick.
  4. Divide the batter evenly into two greased 9 x 5-inch loaf pans.
  5. Bake at 325°F (163°C) for 1 hour or until the center tests done with a toothpick.
