Ingredients

  • 2 cups cooked lobster
  • 1/4 cup butter
  • 1/2 tablespoon flour
  • 2 tablespoons sherry
  • 1/2 cup cream
  • salt
  • pepper
  • 2 egg yolks

Instructions

  1. Cut lobster into bite-sized pieces and toss in flour.
  2. Saute lobster in butter for 3 minutes.
  3. Add sherry and cook for 1 minute.
  4. Add cream, salt, and pepper; stir well.
  5. Add beaten egg yolks and stir constantly.
  6. Cook just under boiling point until the mixture thickens.
  7. Serve on golden brown toast.
