  4. Uncover and continue to cook, stirring, until the eggplant is browned, about 10 to 15 minutes.
  5. Add the diced bell peppers, chopped onion, and minced garlic.
  6. Stir until the onion is soft.
  7. Add garden marinara sauce and cook uncovered until a thick sauce forms, about 10 more minutes.
  8. Add olives; season with salt and pepper to taste.
  9. Let cool to room temperature, then pack into four 1-pint canning jars or freezer containers, leaving 1 inch headspace.
  10. Cover tightly and store in the refrigerator for up to 1 week or in the freezer for up to 6 months.
