A creamy, coffee‑infused parfait with sweet, cinnamon‑spiced layers that’s perfect for a quick, indulgent treat or a cozy dessert for friends.

Ingredients

  • 4 tsp. instant coffee
  • 1 Tbsp. hot water
  • 1 1/2 c. cold milk
  • 1 (4 serving size) pkg. vanilla or chocolate flavor sugar‑free instant pudding and pie filling
  • 1/2 tsp. cinnamon
  • 1 c. whipped topping (lite)

Instructions

  1. Dissolve coffee in hot water in a medium bowl. Add milk, pudding mix and cinnamon. Beat with a wire whisk for 2 minutes.
  2. Let the mixture stand for 5 minutes or until it thickens.
  3. Gently stir in the whipped topping.
  4. Spoon half of the pudding mixture into each of 5 dessert dishes. Sprinkle each with crushed cookies.
  5. Spoon the remaining pudding mixture over the crushed cookies.
  6. Garnish each serving with an additional tablespoon of lite whipped topping, if desired.
  7. Refrigerate until ready to serve.
