Ingredients

  • 1 lb. crab meat
  • 1/4 lb. bacon
  • 4 to 5 large potatoes, pared and diced
  • 2 to 3 large onions, diced
  • 2 Tbsp. Worcestershire sauce
  • 2 c. water
  • 1 tsp. salt
  • 1/2 tsp. celery salt
  • 1 pt. half and half
  • 1 pt. milk
  • 4 to 8 drops hot pepper sauce
  • 1/2 tsp. freshly cracked pepper
  • 2 to 4 tsp. chopped fresh parsley

Instructions

  1. Saute bacon in a large heavy saucepan until crisp.
  2. Remove bacon from pan and set aside.
  3. Cook potatoes and onions in bacon grease until golden brown.
  4. Add Worcestershire sauce, water, salt, and celery salt; cover and simmer for 30 minutes.
  5. Stir frequently during simmering.
  6. Add crab meat, half and half, milk, and hot sauce; simmer for an additional 30 minutes, stirring frequently.
  7. Add extra milk if the stew becomes too thick.
  8. Serve in large bowls topped with cracker pepper and chopped parsley.
