Ingredients

  • 1 (21 oz.) can apple fruit filling, divided
  • 1 (9 or 10-inch) graham cracker crust
  • 2 (8 oz.) packages cream cheese, softened
  • 1/2 cup sugar
  • 1/4 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup caramel topping
  • 12 half pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Reserve 3/4 cup of apple filling for topping.
  3. Spoon the remaining apple filling into the graham cracker crust.
  4. Beat together cream cheese, sugar, and vanilla until smooth.
  5. Add eggs and beat well.
  6. Pour the cream cheese mixture over the apple filling in the crust.
  7. Bake for 35 minutes or until the center is set.
  8. Cool the cheesecake completely.
  9. Mix the reserved apple filling with caramel topping in a small saucepan.
  10. Heat about 1 minute until warmed through.
  11. Arrange apple slices around the outer edge of the cooled cheesecake.
  12. Spoon caramel sauce over the top and spread evenly.
  13. Decorate with pecan halves around the edge.
  14. Sprinkle with chopped pecans.
  15. Refrigerate until ready to serve.
