- Butter a 9-inch round cake pan.
- Pour the caramel ice cream topping into the prepared pan.
- In a large bowl, beat the cream cheese until smooth.
- Add sugar and vanilla to the cream cheese and mix well.
- Add eggs one at a time, beating until smooth after each addition.
- Carefully pour the cheese mixture over the caramel topping in the pan.
- Set the cake pan into a larger pan.
- Add 1/2 to 3/4 inch boiling water to the larger pan to create a water bath.
- Bake at 350°F (175°C) for 50 minutes.
- Carefully remove from the water bath and separate the cheesecake from the pan with a knife onto a serving plate.
- Cover and chill before serving.
