  1. Butter a 9-inch round cake pan.
  2. Pour the caramel ice cream topping into the prepared pan.
  3. In a large bowl, beat the cream cheese until smooth.
  4. Add sugar and vanilla to the cream cheese and mix well.
  5. Add eggs one at a time, beating until smooth after each addition.
  6. Carefully pour the cheese mixture over the caramel topping in the pan.
  7. Set the cake pan into a larger pan.
  8. Add 1/2 to 3/4 inch boiling water to the larger pan to create a water bath.
  9. Bake at 350°F (175°C) for 50 minutes.
  10. Carefully remove from the water bath and separate the cheesecake from the pan with a knife onto a serving plate.
  11. Cover and chill before serving.
