Ingredients

  • 2 egg whites
  • 1/2 cup oil
  • 1 heaping tablespoon baking powder
  • 1 cup flour
  • 2 cups water
  • 1/2 cup powdered milk
  • 3 or more cups cornmeal

Instructions

  1. Beat the egg whites until frothy.
  2. Add oil, baking powder, powdered milk, and flour to the eggs and mix well.
  3. Alternate adding water and cornmeal, stirring until the batter is smooth.
  4. Spray a 7 x 11-inch Pyrex pan with cooking spray (Pam) and heat it.
  5. Preheat the oven to 400°F (200°C).
  6. Pour the batter into the hot pan.
  7. Bake for 45 minutes or until the cornbread is nicely browned.
