Ingredients

  • 1 1/2 cups light brown sugar
  • 1/2 cup sugar
  • 1 1/2 cups dark brown Karo syrup
  • 6 tablespoons butter or margarine
  • 1 cup evaporated milk
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt
  • 2 cups walnut halves

Instructions

  1. Combine the light brown sugar, sugar, and dark brown Karo syrup in a saucepan.
  2. Cook, stirring constantly, to 245°F on a candy thermometer.
  3. Stir in butter or margarine until melted and blended.
  4. Slowly add evaporated milk, continuing to boil and cook until the mixture reaches 245°F again.
  5. Remove from heat.
  6. Add vanilla extract and salt, stirring to combine.
  7. Pour the hot caramel mixture into a well buttered 9 x 13-inch pan and let it cool until firm.
  8. Spread walnut halves on waxed paper the size of the pan.
  9. Turn the cooled caramel out onto the walnuts and press them into the candy.
  10. Roll the caramel and walnuts as a jelly roll to form a log.
  11. Slice into sections and wrap each piece in plastic wrap or waxed paper.
  12. Serve by slicing as desired.
