Ingredients

  • 1 envelope unflavored gelatin
  • 1/3 cup water
  • 1/4 cup lemon juice
  • 3 ounces cream cheese
  • 1 cup dry milk powder
  • 2 tablespoons sugar substitute
  • 1 carton whipped topping
  • 5 tablespoons toasted pecan pieces

Instructions

  1. Sprinkle unflavored gelatin over 1/3 cup water in a small saucepan and let stand for 1 minute.
  2. Bring to a boil and stir until gelatin is completely dissolved; cool slightly.
  3. In a blender or food processor, combine lemon juice, cream cheese, and gelatin mixture; cover and process until smooth.
  4. Transfer the mixture to a large bowl and fold in the whipped topping.
  5. Stir in 3 tablespoons of toasted pecan pieces.
  6. Pour the mixture into a pre-made crust and top with remaining pecans.
  7. Drizzle with caramel topping.
  8. Cover and refrigerate for 2 to 3 hours until set.
