Ingredients

  • 1/2 stick butter
  • 2 cups cooked ham
  • 1 cup whipping cream
  • 2 large egg yolks
  • salt

Instructions

  1. Melt butter in a skillet, add cooked ham and three-quarters of the whipping cream.
  2. Cook over low heat until the cream has thickened or reduced somewhat.
  3. In a separate bowl, blend the remaining cream with egg yolks.
  4. Gradually add the egg mixture to the hot ham and cream mixture, mixing a little hot cream with the cold egg mixture before pouring it all together.
  5. Stir for half a minute over low heat until well combined.
  6. Add a little salt and pepper to taste.
  7. Mix the sauce with cooked spaghetti and toss to combine.
