- Melt butter in a skillet, add cooked ham and three-quarters of the whipping cream.
- Cook over low heat until the cream has thickened or reduced somewhat.
- In a separate bowl, blend the remaining cream with egg yolks.
- Gradually add the egg mixture to the hot ham and cream mixture, mixing a little hot cream with the cold egg mixture before pouring it all together.
- Stir for half a minute over low heat until well combined.
- Add a little salt and pepper to taste.
- Mix the sauce with cooked spaghetti and toss to combine.
