Carp Casserole

Ingredients

  • 2 lb. carp, dressed
  • 2 1/2 c. flour
  • 1/4 c. oil
  • 7 medium chopped potatoes
  • 3 bacon strips
  • 2 sliced pickles
  • garlic
  • chopped parsley
  • 1/4 c. white wine

Instructions

  1. Rub the cleaned carp with salt and dredge in flour.
  2. Roast in a covered pan in the oven.
  3. Fry potatoes in oil with bacon. Remove carp from pan and add potato, pickles and parsley. Sprinkle this with chopped garlic.
  4. Arrange carp on top of potato, add wine and bake until potatoes are tender.
