Ingredients

  • 4 eggs
  • sugar substitute to equal 2 cups sugar
  • 1/4 cup vegetable oil
  • 1/2 to 3/4 cup water
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 cups shredded carrots
  • vegetable cooking spray
  • 1/4 teaspoon salt

Instructions

  1. Combine eggs and sugar substitute in a large bowl; beat at medium speed of an electric mixer until mixture thickens.
  2. Gradually add oil and water; beat until well combined.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, ground cinnamon, and salt.
  4. Stir the dry ingredients into the wet mixture until just combined.
  5. Fold in shredded carrots.
  6. Spray a loaf pan with vegetable cooking spray and pour the batter into it.
  7. Bake at 350°F (175°C) for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from the pan and serving.
