- Combine eggs and sugar substitute in a large bowl; beat at medium speed of an electric mixer until mixture thickens.
- Gradually add oil and water; beat until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, ground cinnamon, and salt.
- Stir the dry ingredients into the wet mixture until just combined.
- Fold in shredded carrots.
- Spray a loaf pan with vegetable cooking spray and pour the batter into it.
- Bake at 350°F (175°C) for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before removing from the pan and serving.
