Ingredients

  • 2/3 cup salad oil
  • 1 cup sugar
  • 2 whole eggs
  • 1 cup self-rising cornmeal
  • 1/2 cup sifted self-rising flour
  • 1 teaspoon cinnamon
  • 1 1/2 cups carrots, finely grated
  • 3/4 cup raisins
  • 1/2 cup pecans, chopped

Instructions

  1. Cream together the salad oil and sugar.
  2. Add the eggs and beat well.
  3. Sift together the self-rising cornmeal and sifted self-rising flour; add to the creamed mixture.
  4. Stir in the finely grated carrots, raisins, and chopped pecans; mix thoroughly.
  5. Pour the batter into a well-greased loaf pan.
  6. Bake in a 350°F oven for about 45 to 50 minutes until golden and a toothpick inserted in the center comes out clean.
