Carrot Crunch

A vibrant and crunchy carrot side dish featuring sweet orange peel, toasted almonds, and a hint of brown sugar, perfect for adding color and flavor to any meal.

Ingredients

  • 6 to 8 large carrots
  • 1/2 tsp. salt
  • 1 1/2 Tbsp. butter
  • 1 1/2 Tbsp. brown sugar
  • 1 1/2 tsp. grated orange peel

Instructions

  1. Cut the carrots lengthwise into slivers.
  2. Cook the carrots in a large covered pan with salt and a small amount of water until just barely tender.
  3. Remove the carrots from the pan and set aside.
  4. Drain any remaining water from the pan.
  5. In the same pan, stir together butter, brown sugar, orange peel, and almonds.
  6. When well mixed, return the carrots to the pan.
  7. Simmer for 5 minutes, turning the carrots to coat them with the almond mixture.
