Carrot Crunch

- Cut the carrots lengthwise into slivers.
- Cook the carrots in a large covered pan with salt and a small amount of water until just barely tender.
- Remove the carrots from the pan and set aside.
- Drain any remaining water from the pan.
- In the same pan, stir together butter, brown sugar, orange peel, and almonds.
- When well mixed, return the carrots to the pan.
- Simmer for 5 minutes, turning the carrots to coat them with the almond mixture.
