Ingredients

  • 1/2 medium lemon
  • 3 extra large eggs
  • 1 cup vegetable oil
  • 1 3/4 cups granulated sugar
  • 2 cups shredded carrots
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp baking soda

Instructions

  1. Grind lemon peel and pulp with a meat chopper or blender.
  2. Beat eggs in a mixing bowl.
  3. Add oil and sugar, mixing well.
  4. Add shredded carrots and lemon mixture, blending until combined.
  5. Sift all dry ingredients together.
  6. Add dry mixture to the liquid and lightly blend.
  7. Pour batter into two greased loaf pans.
  8. Bake at 350°F (175°C) for 45 to 50 minutes or until a cake tester comes out clean.
