Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking flour
  • 1 teaspoon ground ginger
  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 8 ounces crushed pineapple, drained
  • 2 cups shredded carrots
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour four baking pans.
  3. In a large bowl, combine all-purpose flour, salt, baking powder, baking flour, and ground ginger.
  4. In another bowl, whisk together vegetable oil, eggs, and sugar until well blended.
  5. Add crushed pineapple to the wet mixture and stir to combine.
  6. Gradually fold the wet ingredients into the dry ingredients until just combined.
  7. Stir in shredded carrots and chopped pecans.
  8. Pour the batter evenly into the prepared baking pans.
  9. Bake for approximately 50 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before removing from pans and serving.
