Ingredients

  • 4 cups water
  • 1 tablespoon instant chicken bouillon granules
  • 1 teaspoon salt
  • 2 cups chopped carrots
  • 1.5 cups regular rice
  • 2 tablespoons butter
  • 1/2 teaspoon crushed thyme
  • 1/2 cup shredded American cheese

Instructions

  1. In a saucepan, bring water, bouillon granules, and salt to boiling.
  2. Stir in chopped carrots, rice, butter, and crushed thyme. Return to boiling.
  3. Transfer the mixture into a 2-quart casserole dish.
  4. Bake, covered, at 325°F for 25 minutes.
  5. Stir the mixture after baking.
  6. Sprinkle shredded American cheese on top.
  7. Bake uncovered for an additional 5 minutes until cheese is melted.
  8. Garnish with parsley before serving.
