Ingredients

  • 2 lb. carrots
  • 2 (20 oz.) cans pineapple chunks
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • optional cooked green peppers

Instructions

  1. Cook peeled and sliced carrots until tender.
  2. Drain pineapple chunks and reserve the juice.
  3. Heat the pineapple juice and stir in brown sugar and cinnamon until dissolved.
  4. Thicken the sauce with cornstarch, using some reserved pineapple juice or orange juice if needed.
  5. Combine cooked carrots, pineapple chunks, and the sauce in a casserole dish.
  6. Bake at 350°F until bubbly and heated through.
