Sweet and tangy carrots l'orange feature tender carrots coated in a citrus glaze, accented with fresh orange segments and parsley, perfect as a bright side dish for any meal.

Ingredients

  • 2 lb. carrots, sliced
  • 1 c. orange juice
  • 2 Tbsp. sugar
  • 1/2 tsp. lemon juice
  • 1 Tbsp. cornstarch
  • sections of 2 oranges
  • parsley
  • cayenne pepper (optional)

Instructions

  1. Cook carrots in water until tender.
  2. Drain the carrots.
  3. Blend orange juice, sugar, lemon juice, and cornstarch in a pan.
  4. Cook the mixture until thickened, stirring constantly.
  5. Fold in the cooked carrots and orange sections.
  6. Pour the mixture into a serving dish.
  7. Sprinkle parsley on top and add cayenne pepper if desired.
