Ingredients

  • 1 medium cashaw
  • 1/2 cup water
  • 3 to 4 cups sugar
  • 1/2 cup self-rising flour
  • 1 tablespoon vanilla flavoring
  • 1 teaspoon nutmeg
  • 1/2 cup butter or margarine
  • 1/2 cup coconut

Instructions

  1. Peel off the green skin of the cashaw and cut into small squares.
  2. Place the cashaw squares in boiling water, lower the flame, and simmer until tender.
  3. Remove from heat and add butter, sugar, vanilla flavoring, nutmeg, and self-rising flour.
  4. Mix to the desired consistency and fold in coconut last.
  5. Pour the mixture into a prepared pie crust.
  6. Bake in a 400°F oven for 35 to 45 minutes until golden and set.
