Ingredients

  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 1/2 tablespoons cornstarch
  • 1 tablespoon flour
  • 3 cups milk
  • 3 eggs
  • 1 1/4 cups shredded coconut
  • 1 tablespoon butter
  • 2 teaspoons pure vanilla
  • 1/2 teaspoon cream of tartar

Instructions

  1. Mix together 2/3 cup sugar, salt, cornstarch, and flour in a saucepan.
  2. Beat the egg yolks in a separate bowl, then gradually add the milk, stirring constantly.
  3. Gradually add the egg mixture to the dry ingredients in the saucepan, beating well.
  4. Cook and stir over boiling water until the mixture thickens.
  5. Add 1 cup shredded coconut, butter, and 1 1/2 teaspoons vanilla to the thickened mixture.
  6. Cool the filling.
  7. Pour the coconut filling into a baked 9-inch pastry shell.
  8. Meanwhile, prepare the meringue by beating egg whites with cream of tartar until stiff peaks form.
  9. Spread the meringue over the cooled filling, sealing the edges.
  10. Bake the pie at 350°F (175°C) until meringue is golden brown, about 10 minutes.
