Ingredients

  • 2 to 3 tsp. bacon drippings
  • 1 large egg
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 c. buttermilk
  • 1 3/4 c. white cornmeal
  • 1 tsp. baking soda

Instructions

  1. Coat the bottom and sides of a 10-inch cast-iron skillet with bacon drippings and heat it in a 450° oven.
  2. In a bowl, whisk together the buttermilk and egg until well combined.
  3. Add the cornmeal to the buttermilk-egg mixture and stir well.
  4. Whisk in the baking powder, baking soda, and salt.
  5. Pour the batter into the hot skillet.
  6. Bake at 450° for 15 minutes or until the cornbread is golden.
