Ingredients

  • 2 lb. catfish fillets
  • 1 c. finely crushed cheese crackers
  • 1/2 c. grated Parmesan cheese
  • 1/4 c. sesame seed
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. butter or margarine

Instructions

  1. Cut the catfish fillets into 1-inch cubes and set aside.
  2. Combine the finely crushed cheese crackers, grated Parmesan cheese, sesame seed, salt, and pepper in a small bowl.
  3. Dip the fish cubes in melted butter, then roll them in the cracker crumb mixture.
  4. Place the coated fish cubes 1/2-inch apart on aluminum foil-lined baking sheets.
  5. Bake uncovered at 400°F for 20 minutes or until the fish is golden brown.
  6. Serve immediately with your favorite fish dip or Sour Cream Bleu Cheese Dip.
