Ingredients

  • 1 head cauliflower
  • 1/2 cup grated Swiss cheese
  • 1/4 cup mayonnaise
  • 1 egg white
  • 1 teaspoon lemon juice
  • 2 tablespoons Parmesan cheese

Instructions

  1. Make flowerets from the cauliflower and cook for 10 minutes.
  2. Place the cooked cauliflower in a shallow baking dish.
  3. Combine grated Swiss cheese and mayonnaise.
  4. Beat the egg white until stiff and fold into the cheese mixture.
  5. Add lemon juice to the cheese mixture.
  6. Spread the cheese mixture over the cauliflower and sprinkle Parmesan cheese on top.
  7. Bake for about 10 minutes, then broil for about 5 minutes until golden or puffs up.
