Ingredients

  • 1 medium cauliflower
  • 2 whole eggs
  • 2 teaspoons salt
  • 1/2 stick butter
  • 1/2 can tomato paste
  • 2 medium onions

Instructions

  1. Separate and clean cauliflower buds, then drop in boiling salted water for 5 minutes. Remove from water.
  2. Chop onions and brown in butter.
  3. Add tomato paste to browned onions and cook briefly.
  4. Beat eggs, dip cauliflower in beaten eggs, then brown in butter slightly.
  5. Pour tomato paste and onions over cauliflower.
  6. Cover and steam in a 350°F oven for 20 minutes.
