Stuffed artichokes are a flavorful Mediterranean dish featuring tender artichoke hearts filled with a seasoned bread crumb and cheese mixture. The combination of garlic, parsley, and Romano cheese creates a savory, aromatic experience perfect for sharing at family gatherings or special occasions.

Ingredients

  • 2 1/2 cups Italian seasoned bread crumbs
  • 1/2 cup imported grated Romano cheese
  • 6 cloves garlic
  • olive oil
  • parsley
  • 6 artichokes
  • water

Instructions

  1. Clean and cut the artichokes, then snip off the pinchers.
  2. Soak the artichokes in salt water, then rinse and drain.
  3. Chop the garlic cloves.
  4. Place one garlic clove in each artichoke around the leaves.
  5. Mix the Italian seasoned bread crumbs and grated Romano cheese together.
  6. Spread the artichoke leaves and spoon the bread crumb mixture into each leaf, tucking parsley in.
  7. Place the stuffed artichokes upright in a Dutch oven.
  8. Pour a small amount of olive oil over each artichoke.
  9. Fill the pan with water up to the middle three-quarters of the bottom row of leaves.
  10. Bring to a boil and simmer slowly for 2 to 3 hours. Enjoy!
