Ingredients

  • 2 gallons cucumbers, cut lengthwise
  • 6 small onions, sliced in rings
  • 6 ribs celery, sliced in strips
  • 1 tablespoon mustard seed
  • 1 quart vinegar
  • 1/4 cup salt
  • 2 1/2 cups sugar

Instructions

  1. Soak cucumbers, onions, and celery in ice water for 2 hours. Drain.
  2. Pack the soaked vegetables into pint or quart jars.
  3. Combine mustard seed, vinegar, salt, sugar, and water in a pot.
  4. Bring the liquid to a boil and pour over the contents in the jars.
  5. Add lids and rings to the jars.
  6. Place the jars in a boiling water bath and process for 10 to 15 minutes.
  7. Ensure the jars are sealed properly.
