A refreshing gelatin salad with celery and nuts, offering a balance of tangy, crunchy, and creamy textures, perfect for light lunches or elegant gatherings.

Ingredients

  • 6 oz. lemon, orange or lime gelatin
  • 1/2 tsp. salt
  • 2 c. boiling water
  • 1 1/2 c. cold water
  • 1 Tbsp. vinegar
  • 1/2 c. sour cream
  • 1 c. chopped celery
  • 1/2 c. chopped nuts

Instructions

  1. Dissolve gelatin and salt in boiling water.
  2. Add cold water and vinegar; chill until slightly thickened.
  3. Spoon half of gelatin into a 5-cup ring mold and chill until set but not firm, about 10 minutes.
  4. Blend sour cream into the remaining gelatin, then fold in chopped celery and chopped nuts.
  5. Spoon the mixture over the clear layer in the mold.
  6. Chill until firm, about 4 hours.
  7. Unmold and fill the center of the mold with diced fresh fruits.
  8. Garnish with crisp salad greens.
