Ingredients

  • 3 Tbsp. butter
  • 1 medium onion, minced
  • 2 1/4 c. Arborio rice
  • 3/4 c. brut champagne
  • 6 c. hot chicken stock
  • 1 Tbsp. grated lemon peel
  • 3/4 c. grated Parmesan cheese

Instructions

  1. In a large saucepan, sauté the minced onion in butter until soft.
  2. Add the Arborio rice and stir, ensuring each grain is coated with butter.
  3. Increase heat to medium and add the champagne, stirring until absorbed.
  4. Add the hot chicken stock one-half cup at a time, stirring and waiting until the liquid is absorbed before adding the next half cup.
  5. Cook until the rice is tender, about 20 minutes.
  6. Remove the pan from heat.
  7. Add grated lemon peel and grated Parmesan cheese, and season to taste.
