- In a large saucepan, sauté the minced onion in butter until soft.
- Add the Arborio rice and stir, ensuring each grain is coated with butter.
- Increase heat to medium and add the champagne, stirring until absorbed.
- Add the hot chicken stock one-half cup at a time, stirring and waiting until the liquid is absorbed before adding the next half cup.
- Cook until the rice is tender, about 20 minutes.
- Remove the pan from heat.
- Add grated lemon peel and grated Parmesan cheese, and season to taste.
