Ingredients

  • 2 (10 1/2 oz.) cans chicken broth
  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 1 pt. heavy cream
  • 3/4 c. champagne

Instructions

  1. Open cans of chicken broth and scoop off the hardened fat on top; discard. Simmer the broth in a saucepan without boiling.
  2. In another saucepan, heat butter until it gently bubbles, then stir in flour until the mixture bubbles.
  3. Add the hot broth to the butter and flour mixture; stir until smooth and thickened.
  4. Remove from heat.
  5. In a small pan, heat the heavy cream until warm (not hot). Add the cream to the broth mixture and stir to blend, then stir in the champagne.
