- Open cans of chicken broth and scoop off the hardened fat on top; discard. Simmer the broth in a saucepan without boiling.
- In another saucepan, heat butter until it gently bubbles, then stir in flour until the mixture bubbles.
- Add the hot broth to the butter and flour mixture; stir until smooth and thickened.
- Remove from heat.
- In a small pan, heat the heavy cream until warm (not hot). Add the cream to the broth mixture and stir to blend, then stir in the champagne.
