Ingredients

  • 2 (10 1/2 oz.) cans chicken broth
  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 1 pt. heavy cream
  • 3/4 c. champagne

  2. In another saucepan, heat butter until it gently bubbles, then stir in flour until the mixture bubbles.
  3. Add the hot broth to the butter and flour mixture; stir until smooth and thickened.
  4. Remove from heat.
  5. In a small pan, heat the heavy cream until warm (not hot). Add the cream to the broth mixture and stir to blend, then stir in the champagne.
