"Charley'S Omelette"

Ingredients

  • 2/3 c. zucchini, diced
  • 1 1/4 c. fresh mushrooms, sliced
  • 1 c. fresh broccoli, diced
  • 1/2 c. fresh tomatoes, chopped
  • 6 eggs, beaten
  • 2 Tbsp. sour cream
  • 2 oz. butter
  • 1/2 c. grated American cheese
  • salt and pepper to taste

Instructions

  1. Combine first three items in a small bowl.
  2. In an omelette pan, heat butter until foaming.
  3. Add beaten eggs.
  4. Cook as for a regular omelette.
