Checkerboard Chili
Ingredients
- 2 tablespoons butter ⓘ
- 1 onion, chopped ⓘ
- 2 lbs boneless chicken breasts, diced ⓘ
- 6 cups chicken broth ⓘ
- 1 (1 ounce) package williams white chili seasoning mix ⓘ
- 3 tablespoons lime juice ⓘ
- 2 jalapeno peppers, chopped ⓘ
- 2 (15 1/2 ounce) cans chili beans, drained and rinsed ⓘ
- 1 (15 1/2 ounce) can great northern beans, drained and rinsed ⓘ
Instructions
- In a large soup pot or Dutch oven, melt butter and saute onion until transparent.
- Add chicken and cook until juices run clear.
- Add broth and simmer uncovered 30 minutes.
- Add remaining ingredients to the pot and simmer uncovered for another 30 minutes.
