Ingredients

  • 1/2 cup milk
  • 1/2 cup butter or oleo
  • 1/8 teaspoon pepper
  • 1 cup flour
  • 1 cup sharp Cheddar cheese
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 4 eggs

Instructions

  1. Preheat oven to 400°F.
  2. Grease 2 large cookie sheets with vegetable shortening.
  3. Combine milk, water, butter, salt, pepper, and nutmeg in a large saucepan.
  4. Bring to a full rolling boil.
  5. Add flour all at once, stirring vigorously with a wooden spoon until mixture forms a thick, smooth ball that leaves the side of the pan clean.
  6. Remove from heat.
  7. Add eggs one at a time, beating well with a wooden spoon after each addition until the mixture is shiny and smooth.
  8. Stir in cheese until melted.
  9. Drop the mixture by heaping teaspoonfuls, about 1 inch apart, onto the prepared sheets.
  10. Bake in the preheated oven for 10 minutes.
  11. Lower oven temperature to 350°F; bake for an additional 10 to 15 minutes, or until puffs are golden and puffed.
  12. Turn off the oven.
  13. Prick puffs in several places with a fork.
  14. Let puffs stand in the oven for 5 minutes before serving warm.
