Ingredients

  • 3 cups milk, divided
  • 1 cup yellow cornmeal
  • 1 cup shredded sharp Cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon baking powder
  • 3 egg yolks, well beaten
  • 3 egg whites

Instructions

  1. Preheat oven to 325°F (163°C). Lightly grease a 3-quart baking dish.
  2. Scald 2 cups of milk in a 3-quart saucepan over low heat.
  3. Gradually add cornmeal to the hot milk, stirring until thickened.
  4. Remove from heat.
  5. Stir in shredded sharp Cheddar cheese until melted.
  6. Add 1 cup of milk, salt, pepper, baking powder, and beaten egg yolks; mix well.
  7. In a separate bowl, beat egg whites until soft peaks form.
  8. Gently fold the egg whites into the cornmeal mixture.
  9. Pour the mixture into the prepared baking dish.
  10. Bake for 1 hour or until set.
