- In a separate bowl, mix gelatin and cold water; set aside.
- Beat egg yolks with 1/2 cup sugar until thick and lemony-looking.
- Mix pumpkin with milk, salt, cinnamon, and nutmeg.
- Add the egg yolk mixture to the pumpkin mixture.
- Cook over hot water until thick, about 10 minutes, stirring constantly.
- Add the gelatin mixture, stir, and cool.
- Beat egg whites, gradually adding 1/2 cup sugar, until very stiff.
- Fold whipped heavy cream or Cool Whip into the cooled custard along with the egg whites.
- Spoon the mixture into a baked pie shell and chill overnight.
- When ready to serve, whip the remaining heavy cream or Cool Whip and spread on top.
- Sprinkle toasted coconut on top of the pie.
