Ingredients

  • 8 medium potatoes, peeled and cubed
  • 1/2 cup sour cream
  • 1/3 cup butter or margarine, softened
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 2 bacon strips, cooked and crumbled
  • 1 teaspoon minced chives (optional)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Place peeled and cubed potatoes in a saucepan and cover with water; bring to a boil over medium-high heat.
  3. Cook for 15 to 20 minutes or until potatoes are tender.
  4. Drain the potatoes and mash them until smooth.
  5. Add sour cream, softened butter, salt, and pepper; beat until the mixture is smooth and fluffy.
  6. Transfer the mashed potatoes to a greased 2-1/2 quart baking dish.
  7. Sprinkle shredded cheddar cheese, crumbled bacon, and minced chives on top if desired.
  8. Bake uncovered for 20 minutes or until heated through and cheese is melted.
