Cheddar Spinach Spread

Ingredients

  • 8 oz. pkg. cream cheese, softened
  • 2 Tbsp. onion, chopped
  • 5 strips bacon, cooked and crumbled
  • 2 oz. sliced, canned mushrooms, chopped
  • 1/2 c. shredded Cheddar cheese
  • parsley to taste
  • seasoned pepper to taste
  • 1/8 tsp. minced garlic
  • salt to taste
  • 1/16 tsp. paprika
  • 1/2 lb. fresh spinach
  • 1/4 lb. black olives

Instructions

  1. Saute onions and spinach in bacon grease until tender.
  2. Chop spinach.
  3. Mix all ingredients together and refrigerate overnight to blend flavors.
  4. Heat 30 to 45 minutes (in a small casserole dish) in 350° oven.
  5. Garnish with black olives and a spinach leaf.
  6. Serve with Swiss cheese crackers.
  7. Makes 2 cups spread.
