Ingredients

  • 1 pkg. dry yeast
  • 1 tsp. sugar
  • 2 Tbsp. warm water
  • 1 c. buttermilk
  • 3 c. self-rising flour
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 2 Tbsp. sugar
  • 1/3 c. shortening

Instructions

  1. Combine yeast, 1 teaspoon sugar, and 2 tablespoons warm water; let stand for 5 minutes.
  2. Add buttermilk to the yeast mixture and set aside.
  3. In a large bowl, combine self-rising flour, baking powder, baking soda, and 2 tablespoons sugar.
  4. Cut in shortening with a pastry blender until mixture resembles coarse meal.
  5. Stir in shredded cheese.
  6. Add buttermilk mixture, stirring just until dry ingredients are moistened.
  7. Cover and chill the dough for 30 minutes.
  8. Turn dough out onto a lightly floured surface and knead 4 or 5 times.
  9. Roll dough to 1/2-inch thickness and cut with a 2 1/2-inch biscuit cutter.
  10. Place on a lightly greased baking sheet, cover, and let rise in a warm place (85°F) free from drafts for 30 minutes.
  11. Bake at 400°F for 10 to 12 minutes or until golden brown.
