Ingredients

  • 1 lb. New York Cheddar cheese
  • 1/2 lb. Roquefort cheese
  • 24 oz. Philadelphia cream cheese
  • 1/2 lb. imported Swiss cheese
  • 1/2 lb. California Monterey Jack cheese
  • 1/2 cup melted butter
  • 1/2 cup dry sherry
  • 2 Tbsp. Worcestershire sauce
  • 1 tsp. cayenne pepper
  • 1 tsp. Beau Monde seasoning
  • juice from 2 fresh limes

Instructions

  1. Grate or mash all the cheeses and mix them together in a large bowl.
  2. Add the melted butter, lime juice, sherry, and seasonings (except paprika) to the cheese mixture and combine thoroughly.
