Ingredients

  • 1 1/2 cups shredded sharp Cheddar cheese
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon paprika
  • pepper to taste
  • 3 egg whites, stiffly beaten
  • cracker crumbs
  • salad oil

Instructions

  1. Combine shredded Cheddar cheese, all-purpose flour, paprika, and pepper in a bowl.
  2. Add the stiffly beaten egg whites to the cheese mixture and mix well.
  3. Shape the mixture into small balls.
  4. Roll each ball in cracker crumbs.
  5. Fry the balls in hot salad oil at 375°F until golden brown.
  6. Drain on paper towels.
  7. Serve hot.
