Ingredients

  • 2 cups milk
  • 1 cup cornmeal
  • 1/4 cup butter, softened
  • 1/2 cup shredded mild Cheddar cheese
  • 4 eggs
  • 1 teaspoon salt

Instructions

  1. Place milk in the top of a double boiler over boiling water; heat until hot.
  2. Stir in cornmeal; cook, stirring until thickened.
  3. Remove from heat; stir in butter, cheese, egg yolks, and salt.
  4. Stir until cheese melts and mixture is smooth.
  5. Beat egg whites at room temperature until stiff peaks form; fold into the cornmeal mixture.
  6. Pour into a greased 2-quart casserole.
  7. Bake at 350°F (175°C) for 30 to 35 minutes or until puffed and browned.
  8. Serve immediately.
