Ingredients

  • 2 lb. fresh or frozen carrots, sliced
  • 1/2 lb. Velveeta cheese
  • 1 stick margarine
  • cornflake crumbs

Instructions

  1. Boil carrots until tender; drain.
  2. Place carrots in a greased 7 x 11-inch baking dish.
  3. In a saucepan, melt Velveeta cheese and margarine, stirring constantly.
  4. Pour the cheese mixture over the drained carrots.
  5. Top with cornflake crumbs and dot with butter.
  6. Bake at 350°F until brown and bubbly, about 30 minutes.
