Ingredients

  • 4 cups rhubarb
  • 2 tablespoons cornstarch
  • 1 teaspoon almond extract
  • 3/4 cup quick cooking oats
  • 3/4 cup brown sugar
  • 3/4 cup flour
  • 1/3 cup butter
  • 1/2 cup chopped walnuts
  • 1/2 cup sugar
  • 1 cup water
  • dash of salt
  • 1 (1 lb. 5 oz.) can cherry pie filling

Instructions

  1. Place rhubarb in an 11 x 7-inch baking pan.
  2. Combine sugar and cornstarch in a small saucepan.
  3. Gradually stir in water.
  4. Cook, stirring constantly over medium heat, until thick.
  5. Stir in cherry pie filling and almond extract.
  6. Pour the fruit mixture over the rhubarb in the baking pan.
  7. In a separate bowl, combine oats, flour, sugar, and salt.
  8. Cut in the butter until the mixture is crumbly.
  9. Stir in chopped walnuts.
  10. Sprinkle the streusel mixture over the fruit in the pan.
  11. Bake at 350°F for 45 minutes.
  12. Serve warm with whipped cream.
