Ingredients

  • 4 1/2 oz. reduced-fat sharp Cheddar-flavor cheese
  • 4 1/2 oz. part skim Mozzarella cheese
  • 4 1/2 oz. elbow macaroni
  • 2 c. fresh or thawed, frozen broccoli florets
  • 2 Tbsp. plain wheat germ
  • 1 Tbsp. imitation bacon bits
  • 1 Tbsp. yellow mustard
  • 1/2 tsp. salt
  • pinch of ground red pepper

Instructions

  1. Preheat oven to 450°F.
  2. Spray a 6-cup shallow baking dish with nonstick cooking spray.
  3. Cut the Cheddar-flavor cheese and the Mozzarella into 1/4-inch cubes.
  4. Cook the elbow macaroni according to package instructions until al dente, then drain.
  5. In a mixing bowl, combine cooked macaroni, broccoli florets, wheat germ, imitation bacon bits, yellow mustard, salt, and ground red pepper.
  6. Add the cubed cheeses to the mixture and stir until well combined.
  7. Pour the mixture into the prepared baking dish.
  8. Bake in the preheated oven for 20-25 minutes until bubbly and golden on top.
  9. Serve hot.
