Ingredients

  • 9 medium potatoes
  • 2 cups Cheddar cheese
  • 1/4 cup butter
  • 1 (8 oz.) sour cream
  • 1 tablespoon chopped green onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • paprika

Instructions

  1. Add water to unpeeled potatoes just to cover.
  2. Sprinkle with salt.
  3. Bring to a boil and cook for 30 to 35 minutes until tender.
  4. Drain the potatoes.
  5. Peel and shred the potatoes with a grater.
  6. In a large mixing bowl, combine the shredded potatoes, cheddar cheese, and butter; stir until the butter is melted.
  7. Stir in sour cream, chopped green onion, salt, and pepper.
  8. Transfer the mixture to a greased baking pan.
  9. Bake uncovered at 325°F for 45 minutes.
  10. Sprinkle with paprika before serving.
