A cheesy, flavorful Mexican-inspired chicken dish layered with corn chips and melted cheddar, perfect for a quick family dinner or casual gathering.

Ingredients

  • 1 to 1 1/2 lb boneless chicken
  • 1 can condensed cream of chicken soup
  • 2 cups grated Cheddar cheese
  • 1/2 cup milk
  • 1 package taco seasoning
  • 1 bag corn chips

Instructions

  1. Cut the chicken into bite-sized pieces and cook in a Microsteamer for 6 to 8 minutes.
  2. Mix the condensed cream of chicken soup, milk, taco seasoning, and 1 1/2 cups of grated Cheddar cheese to make the sauce.
  3. Place 1/3 of the corn chips in the bottom of a large deep microwave-safe dish.
  4. Arrange the cooked chicken on top of the corn chips.
  5. Spoon the soup mixture over the chicken.
  6. Top with the remaining corn chips and the rest of the cheese.
  7. Microwave on High for 5 minutes until hot and bubbly.
