Cheesy Mixed Vegetable Bake
A cheesy, hearty vegetable bake combining mixed vegetables, pimentos, and Swiss cheese, topped with crispy fried onions—perfect for family dinners and vegetable lovers alike.

- Preheat oven to 350°F.
- Grease a large casserole dish.
- Combine frozen mixed vegetables, half of the drained pimento, mushroom soup, sour cream, pepper, half of the fried onions, and half of the shredded Swiss cheese in a bowl and mix well.
- Spoon the mixture into the prepared casserole dish and bake for 20 minutes.
- Remove from oven and sprinkle remaining fried onions and cheese on top.
- Bake for an additional 5 minutes.
- Remove from oven and sprinkle with remaining pimento.
- Let stand for 5 minutes before serving.
