A cheesy, hearty vegetable bake combining mixed vegetables, pimentos, and Swiss cheese, topped with crispy fried onions—perfect for family dinners and vegetable lovers alike.

Ingredients

  • 16 oz. frozen mixed broccoli, cauliflower, and carrots
  • 4 oz. can chopped pimento, drained
  • 10 oz. can golden mushroom soup
  • 1/3 cup sour cream
  • 1/4 teaspoon pepper
  • 3 oz. can French-fried onions
  • 1 cup shredded Swiss cheese

Instructions

  1. Preheat oven to 350°F.
  2. Grease a large casserole dish.
  3. Combine frozen mixed vegetables, half of the drained pimento, mushroom soup, sour cream, pepper, half of the fried onions, and half of the shredded Swiss cheese in a bowl and mix well.
  4. Spoon the mixture into the prepared casserole dish and bake for 20 minutes.
  5. Remove from oven and sprinkle remaining fried onions and cheese on top.
  6. Bake for an additional 5 minutes.
  7. Remove from oven and sprinkle with remaining pimento.
  8. Let stand for 5 minutes before serving.
